When at a wine bar… or any place that serves wine by the glass, you should:

Be sure that the wine has not been opened for too long. Take time to notice at the bar how empty the bottle is, and how busy the restaurant. It could be that they have been opening many bottles in succession because it is busy. But beware of the recent white wine vintage, especially the nicely priced ones, that are poured from an almost empty bottle at opening hours. Who knows how long that wine has been opened. And whether the establishment has used a vacuum sealer to at least preserve freshness. Ask!
